Moong dal kachori
Moong dal kachori is demonstrated.It is a snack of North India especially Rajasthan.It is made of all purpose flour,moong dal and spices.Moong dal kachori is liked by most of the Indians.Kachoris are of many types:dal,peas,potatoes.The name of the kachori is all about stuffing.
All purpose flour – 2 cups
Oil – 1/4 cup
Carrom seeds – 1/4 spoon
Dhuli moong dal – 1/2 cup
Oil – 2 spoons
Asafoetida powder – 2 pinches
Coriander powder – 11/2 spoon
Cumin powder – 1 spoon
Fennel seeds powder – 1 spoon
Turmeric powder – 1/2 spoon
Red chilly powder – 1 spoon
Mango powder – 1 spoon
Kasuri methi – 1/2 spoon
Grated ginger – 2 spoons
Chopped green chillies – 3
Chickpea flour – 3 spoons
To make Moong dal kachori,Soak moong dal for 4 hours and blend it for 30 seconds to a coarse mixture.
Take a mixing bowl.Add all purpose flour,oil,salt and carrom seeds.Mix and check if the amount of oil is accurate by binding it in palm.
Now make a soft,chapati like dough by adding water in instalments.
Keep the dough for rest for 1/2 an hour.
To make stuffing,heat a pan and add oil.
Add asafoetida powder,coriander powder,cumin powder,fennel seeds powder,turmeric powder,red chilly powder,ginger and green chillies.Saute till done.
Add chickpea flour and saute till done.
Add coarse moong dal paste and saute till dry.
Add mango powder and kasuri methi and mix.
Stuffing is ready.
Make balls out of dough.Make balls out of stuffing also.
Dough balls and stuffing balls should be of equal size.
Make kachoris as per demonstration.
Keep the kachoris under damp cloth to prevent cracks till frying.
Fry the kachoris on low heat to make crisp.
Serve Moong dal kachori with tamarind and green chutney.
