Sukhi sabzi recipes

 

 

Sukhi sabzi recipes are about seasonal vegetables cooked dry.These act as side dish with dal and can be packed in lunch boxes.Mushroom,rajma,aloo methi,gobhi matar,besani aloo and aloo baingan recipes are shared.Some like curry sabzi like Masala Bhindi with chapati and Naan.

Mushroom ki sukhi sabzi

Ingredients

Oil – 2 spoons

Chopped garlic – 1 spoon

Chopped onion – 1

Cumin powder – 1/4 spoon

Coriander powder – 1/2 spoon

Turmeric powder – 1/2 spoon

Red chilly powder – 1/2 spoon

Salt to taste

Tomato puree of 2 tomatoes

Mushroom – 400 grams

Garam masala – 1/4 spoon

Coriander leaves – 1 spoon

Method

Heat a pan and pour oil.

Add garlic and saute till light brown.

Add onion and saute till done.

Add cumin powder,coriander powder,turmeric powder and red chilly powder and saute till done.

Now add tomato puree and saute till moisture of tomatoes is gone.

Add mushrooms,salt and stir .

Cover the lid and cook on low mode of gas stove for 5 minutes.

Uncover lid and cook till extra water is evaporated as mushrooms release enough water.

Add garam masala and coriander leaves and mix.

Mushroom ki sukhi sabzi is ready.

Besani aloo

Ingredients

Oil – 2 spoons

Chickpea flour – 2 spoons

Cumin powder – 1/4 spoon

Coriander powder – 1 spoon

Carrom seeds – 1 pinch

Turmeric powder – 1/4 spoon

Red chilly powder – 1/2 spoon

Mango powder – 2 spoons

Salt to taste

Grated ginger – 1 spoon

Chopped green chillies – 2

Medium sized Boiled potatoes – 3

Method

Peel and dice potatoes.

In a bowl,Mix chickpeaflour,cumin powder,coriander powder,red chilly powder,turmeric powder,salt,carrom seeds and mango powder.

Heat a pan and pour oil.

Add grated ginger and chopped green chillies and saute till done.

Add mixed powder and saute for 30 seconds

Now add diced potatoes and mix.

Put the gas stove on low mode and spread potatoed in the pan.

Cook for 2 minute.

Flip the potatoes and again cook for 2 minutes.

Besani aloo are ready to serve.

Rajma ki sukhi sabzi

Ingredients

Oil – 1 spoon

Chopped onion – 1

Grated ginger – 1 spoon

Chopped green chillies – 2

Chopped tomatoes – 2

Cumin powder – 1/4 spoon

Red chilly powder – 1/4 spoon

Turmeric powder – 1/4 spoon

Garam masala – 1/4 spoon

Salt to taste

Boiled kidney beans – 1 cup

Coriander leaves – 2 spoons

Method

Heat a pan and pour oil.

Add onions and saute till translucent.

Add grated ginger and chopped green chillies.

When ginger and green chillies done,Add cumin powder,red chilly powder and turmeric powder and saute.

Add chopped tomatoes and salt and saute till tomatoes are soft.

Add boiled rajma or kidney beans and mix.

Put the gas on low mode and cook for 2 minutes while lid is covered.

Uncover the lid and stir rajma sabzi.

Add garam masala and coriander leaves and mix.

Rajma ki sukhi sabzi is ready.

Aloo methi ki sukhi sabzi

Ingredients

Oil – 2 spoons

Diced potatoes – 2

Chopped garlic – 11/2 spoon

Chopped green chillies – 2

Cream – 1 spoon

Fenugreek leaves – 1 bunch

salt as per taste

Method

Heat a pan and add oil.

Add chopped garlic and green chillies and saute till done.

Add diced potatoes and salt and mix.

Put the gas on low mode of gas stove and cook for 2 minutes while lid is covered.

Uncover the lid and add fenugreek leaves and mix.

Again cover the lid and cook for 2 minutes.

Uncover the lid and pour cream and mix.

Adding cream is optional But believe me It is going to double the taste.

Aloo methi is ready to serve.

Gobhi matar ki sukhi sabzi

Ingredients

Oil – 11/2 spoon

Cumin seeds – 1/4 spoon

Red chilly powder – 1/4 spoon

Turmeric powder – 1/4 spoon

Garam masala – 1/4 spoon

Salt as per taste

Chopped onion – 1

Green peas – 1 cup

Grated ginger – 1 spoon

Chopped tomatoes – 2

Gobhi florets – 300 grams

Coriander leaves – 2 spoons

Method

Heat a pan and pour oil.

Add cumin seeds and let it splutter.

Add chopped onion and saute till light brown.

Add matar(peas),salt and cook for 2 minutes on low mode of gas stove while lid is covered.

Uncover the lid and add grated ginger and saute for a while.

Add turmeric powder,red chilly powder and saute till done.

Put the gas stove on high mode and add chopped tomatoes and cook till tender.

Now add gobhi(cauliflower) and mix.

Put the gas stove on low mode and cook for 2 minutes while lid is covered.

Uncover the lid and stir.

Add garam masala and coriander leaves and stir.

Gobhi matar is ready to serve.

Aloo baingan ki sukhi sabzi

Ingredients

Oil – 2 spoons

Sliced onions – 2

Potatoes – 3

Green chilly slit – 4

Red chilly powder – 1/2 spoon

Turmeric powder – 1/4 spoon

Coriander powder – 11/2 spoon

Mango powder – 1/4 spoon

Salt to taste

Method

Heat a pan and pour oil.

Add sliced onions and saute till light brown.

Peel and slice potatoes.

Add sliced potatoes in the pan and saute for 30 second.

Add salt and mix.

Put the gas stove on low mode and cook for 2 minutes while covered with lid.

Uncover and add sliced baingan.

Add cumin powder,turmeric powder,red chilly powder and coriander powder.

Mix and cook for 2 minutes while lid is covered.

Uncover the lid and add mango powder and mix.

Aloo baingan ki sukhi sabzi is ready.
