Ingredients (Gajar aur mooli ka achar)

First method (Instant achar)

Carrots – 1

Radish – 1

Ginger – 1 inch

Green chillies – 5

Yellow mustard seeds – 2 spoons

Red chilly powder – 1 spoon

Turmeric powder – 1 spoon

Black salt  Р1 spoon

Salt – 1/2 spoon

Lemon juice of 1/2 lemon

Mustard oil – 2 spoons

Second method

Carrots – 400 grams

Radish – 400 grams

Ginger – 3 inch

Green chillies – 100 grams

Mustard oil – 1/2 cup

Cumin seeds – 2 spoons

Fenugreek seeds – 1 spoon

Black salt Р1/4  spoon

Carrom seeds – 1 spoon

Mustard seeds ( Rai) – 3 spoons

Red chilly powder – 1 spoon

Turmeric powder – 1 spoon

Salt – 1/2 spoon

Asafoetida powder – 1/4 spoon

Method (Gajar aur mooli ka achar)

First method

Peel and cut carrot ,radish,ginger.Cut green chillies into halves.

Coarsly grind yellow mustard seeds.

Heat mustard oil till fumes come out.

In a mixing bowl,pour pieces of carrot,radish,ginger and green chillies.

Mix yellow mustard seeds powder,red chilly powder,turmeric,black salt,salt,mustard oil and lemon juice in the cut vegetables.

Toss vegetables and spices.

Instant achar of gajar aur mooli is ready.

Second method

Peel and cut carrots and radishes.

Peel and cut ginger into slices.

Cut green chillies into 4 pieces.

Roast mustard seeds,fennel seeds,cumin seeds and black pepper corns.

Grind roasted spices.

Coarsly grind mustard seeds (rai).

Rub salt on carrots and radish pieces and let it stay for 24 hours.

After 24 hours,strain water released from vegetables.Dry vegetables under ceiling fan.

In a mixing bowl,mix vegetables,mix vegetables with spices,roasted spices,mustard oil,vinegar.

After third day,rai will mature and achar will be ready.
