Kalmi vada/कलमी वडा

Kalmi vada is a Rajasthani snack which is an ideal accompaniment with tea on a rainy day.As kalmi vadas are double fried,so are exceptinally crunchy.The spices used make vadas irrestible to eat more than one serving.Kalmi vadas are made of dals especially chana dal.Infact coarse mixture of dal make it crunchy.


Chana dal – 1 cup

Moong dal – 1 cup

Whole corinder seeds – 11/2 spoon

Cumin seeds – 1 spoon

Coarse black pepper – 1 spoon

Asafoetida powder – 1/4 spoon

Ginger – 1 inch

Green chilly – 4

Lemon juice – 1 spoon

Salt – as per taste

Oil for frying

Green chutney

Tamarind chutney


Wash and soak dals in separate bowls.

Blend chana dal,moong dal,coriander seeds,cumin seeds,black pepper,asafoetida powder,ginger,green chillies,salt to a coarse mixture.

Make 20 round and flat vadas of 11/2″diameter.

Heat the oil in a kadai and deep fry vadas on medium flame till light briwn from both sides.

Cut the vadas in stripes and again fry on high flame till deep brown.

Serve hot with green chutney or tamarind chutney or both.
