Malai kofta recipe
Malai koftas are deep friedĀ paneer dumplings which are crunchy from outside and soft inside and served.The creamy cashew,tomato curry is poured just before serving.The koftas are stuffed with dry fruits which makes it an exotic dish.Cream is poured over as garnish.Malai kofta is a cuisine which is served in famous restaurants.
Ingredients
For Malai kofta
Potatoes – 100 grams
Paneer – 125 grams
Cornflour – 2 spoons
Grated ginger – 1 spoon
Black pepper powder – 1/2 spoon
Salt – 1/2 spoon
Oil for frying
Almonds – 5
Cashews – 5
Raisins – 5
Grren chilly – 1
For gravy
Oil – 2 spoons
Onions – 2
Garlic cloves – 5
Ginger – 1 inch
Tomatoes – 3
Cumin powder – 1/2 spoon
Turmeric powder – 1/2 spoon
Red chilly powder – 1/2 spoon
Coriander powder – 1 spoon
Cream – 2 spoon
Method
Boil,peel and mash potatoes.
In a mixing bowl,add potatoes,paneer,cornflour,black pepper powder and salt.
Mix to make a dough.
To make stuffing,cut almonds,cashews and raisins.Mix and also add finely chopped green chilly.
Make koftas out of dough by stuffing dry fruit mix.
Roll koftas in all purpose flour.
Fry koftas on low medium heat.
To make gravy,heat 2 spoons of oil in a pan.
Chop onions and put in the pan.
Saute till light brown.
Add garlic cloves and ginger and saute for a minute.
Add chopped tomatoes and cook till tender.
Blend the mixture when cold.
Heat a separate pan and pour 2 spoons of oil.
Add cumin seed powder,turmeric powder,red chilly powder and coriander powder and saute.
Now add blended paste and saute till moisture is gone.
Add cashew paste and cream.Saute till raw flavour of cashew paste disappears.
Add 3/4 cup of water and salt.Let to boil for 2 minutes.
To serve Malai kofta,place koftas and pour gravy.
Garnish with cream.
