Gajar ka halwa
Gajar ka halwa is a famous sweet of India.Its main ingredient is carrot or gajar,so its name.It is made by adding grated carrots in the kadai and cooking with milk on slow flame.Sugar and dry fruits are added.But now-a-days,It is made by cooking grated carrots in very small amount of milk,then adding khoya,sugar and dry fruits.I am sharing this quick variation of Gajar ka halwa with khoya.It is also called Gajrela.Unlike Moong dal halwa and Aloo halwa, gajar ka halwa has less ghee and sugar ,so it is a healthy sweet.Other carrot recipes like Carrot balls and Gajar malpua can be tried.To get rich taste of carrots,always use fresh carrots.
Ingredients for Gajar ka halwa
Grated carrots – 500 grams
Milk – 100 ml.
Ghee – 1 spoon
Khoya – 100 grams
Sugar – 50 grams
Green cardamom powder – 1/4 spoon
Chopped dry fruits – 1/2 cup
To make Gajar ka halwa,add 1 spoon of ghee in the kadai.
Add grated carrots when ghee is melted.
Saute for a minute.
Cover and cook for 5 minutes on low mode of gas while lid is covered.
After 5 minutes,add sugar and cook for another 5 minutes on low mode of gas stove while lid is covered.
Now,pull the lid and add milk.
Cook till whole moisture evaporates on high mode of gas stove.
Saute khoya in another pan and add in the carrots mixture.
Mix and saute for 1 minute so that khoya incorporate evenly in the carrot mixture.
Add cardamom powder and chopped dry fruits.Mix well.
Tasty,yummy and nutritious Gajar ka halwa is ready.
Mix dry fruits in the halwa and serve.
Garnish with dry fruits slices.
